Ever since I can remember I have been addicted to food… And in recent years food programmes. I have lots of food heroes from all over the world and even though I will never be a chef, I love to re-create their recipes. As a child I have always enjoyed cooking and baking.

I love Christmas cake. I really do. I love the spice and all the fruit that is packed into slice. I love the sweetness of the icing and marzipan that  just marries with the fruit.

Christmas should be about about eatting lots of lovely rich and seasonal food. From the end of October, our cupboards start to fill up with many of the treats that we will indulge in over the festive period. One of the worlds staple ingredients is wheat flour, it is found in baked goods, pasta, biscuits, breads and is used in processed food as a bulking agent.

One of the many challenges that people who suffer from coeliac disease or for anyone who is wheat intolerant is being able to enjoy some of life treats without making yourself ill. There are a number of great grain free flours available for anyone who is either gluten free or wants a healthier life style, coconut flour is just one of them.

Over a third of Britons have no clue when it comes to catering for people with dietary requirements

Over one third of people do not know how to cater for people with food intolenrances or allergies.  There is now a great range of products out there including these croissants made by Genius Gluten Free, who also make breads and cakes.

This may not be the most attractive of cakes and perhaps looks like an early life form, but this is mint Aero Bubble cake, baked in the slow cooker.

The cake, originally blogged by Bakingqueen74, went viral via social media  in 2014. What makes this cake unique, is that it is made in the slow cooker, and if you follow or have read Lucy’s blog she has blogged a number of great bakes that can be made in the slow cooker.
