#AtoZchallenge – D is diet coke chicken
With many of us leading such a busy life means that our main meals often become mundane and end up tasting the same.
After talking to a friend of mine about my stir fry dinners she asked if I had ever thought about using Diet Coke to make a sauce… My reaction was that ‘you can’t use fizzy coke to make a sauce.’ And in my eyes Diet Coke is for drinking and not for cooking with, until now. It turns out you can make a tasty Chinese type of meal with Diet Coke.
This recipe first took off as a Slimming World recipe and many slimmers rave about it. I am going to do the same and rave about it.
I was pleasantly surprised at what it tasted like and really enjoyed this sweet yet sticky sauce. It tastes something between a black bean and BBQ type of sauce.
The best part is that this is gluten free.
400g sliced chicken breast
1 onion, diced
1 clove of garlic chopped or crushed
1 red pepper cut into strips
330ml can Diet Coke
6 tablespoons passata
1 tablespoon of gluten free soy sauce
Pepper to taste
1. Heat a large sauce pan with some olive oil.
2. Add the chicken, onion and garlic and fry until beginning to colour. Then add the pepper and cook for two minutes.
3. Add the diet coke, gluten soy sauce and passata and bring to the boil.
4. Turn the heat down and simmer until the sauce thickens and reduces down to about half its volume. This will take about approximately 30 minutes.
